I have to say that it was an exceedingly likable plate. The corn bisque evoked memories of my mother’s creamed corn, and the fish that swam in it was cooked perfectly. A faint rosy hue peeked out from flesh that was soft, supple and juicy, and the skin was crisp like a fried snack from a plastic bag. The vegetables had lost some color, but they were still toothy and fresh. This is the sort of thing you could eat every day and not get too tired of it.

Perhaps James Slater’s most obvious asset is his warmth. He greets his customers at Knife with a crescent moon smile, so bright it lights up the entire room. And even though we’ve just met, he welcomes me with a bear hug that instantly disarms. Next in line is his creativity. Manifestations of Slater’s brilliance are everywhere: in his crowd-pleasing Green Bloody Mary, and in the apple foam that marks the top of his mimosas. Imagination highlights everything he does. And when it comes to cocktails, Slater doesn’t mind getting deep.
